play-dough בצק יצירה


For Kids Only ...Yaeli from Tapuz food forum for kids is a very nice lady, she has 3 cute kids, a warm family and she knows how to cook as well.. .Few months ago she wrote about a play-dough for kids, she gut the recipe from her mother-in-law which was a kindergarten teacher for 34 years or more.All you need for this dough is : flour, salt, water, oil,cream of tartar and food coloring as well. The dough is for your kids or for you..(yes I like it too! ;) ).The dough is not sticky,and very relaxing [this evening-Katyushas near Hedera erea !!! :-( ] please tell your kids: Don't eat the dough !. Ok you can make few of the same dough, I've made my first dough in a small quantity .you can make it with any color ,if you want a green one or a bleu one.. just make the same dough again.
for 650 gr dough you need:
1 1/2 cups flour
1 1/2 cups water
1/2 cup salt
1 1/2 ts cream of tartar
3 TB oil
food coloring (I use a 55 gr bottle)

H O W
Mix above ingredients in a cooking pot , cook slowly for few minutes only, don't stop mixing until the dough is thick and separates from the pot (don't overcook it). Now transfer the dough to a baking paper and let it cool.. keep it in a closed plastic bag . Yealy says it keeps well for few months.

I hope everyone knows those days , that you can't write easily, more then few words,these are my days my friends, so in the meantime I post some new photos...I don't cook or bake everyday (but I eat too much..) I have few free days , but I need some more.. ( Tuscany, please wait for us..) we aren't realy 'relaxed' here these days, but this bad situation will end soon [I hope :-) ] .I'm very glad for every visitor here in my Blog , your warm comments makes me very happy (sorry if I don't reply immediately), so I know there will be new recipes and pics here very soon. thank you !

Fudge Brownies Supreme and links

Purslane Green Leaf /Scientific Name: Portulaca oleracea sativa /ריג'לה/פרפחינה
Yesterday I've found an interesting thing, Anat s. (Ort)was cooking with her aunts this kind of green herb, with onions and tomatoes, I thing it looks very tasty, did you eat this kind of greens ? "... It has a slightly sour and salty taste and is eaten throughout much of Europe and Asia..." It's not the kind of Portulaca I'm growing in my samll garden like here ... but as you can read, It's the same family.. ; The Hebrew name is very close to legs couse the leaves are like a foot shape.. the ultimate brownies" I'll never know until I'll try..
So today ,It's my free day ! and the
brownies are in the oven, now I'm reading (is it too late?...), that elf reduced the sugar yet, but I did it too.. so the total sugar amount is now = 1 cup = 3/4 white sugar + 1/4 golden sugar…I'm curious to see the results ... yes, they are wet and tasty,I've baked them for 30 minutes at all. I will eat another Brownie .. so I can decide if they are the ultimate.. (or maybe these are? )any yes they're not too sweet at all.. :-)
This baby cat.. she was walking there, near my house,small and very cute..her eyes are green.. like my eyes..

I realy want to thank everyone here/by mail for your warm support, I would like to answer everybody Personally- later .
On friday we were celebrating Adi's birthday (8),lot of food as you can see (and there was more..),presents ..good company - do we need more? Mom and my sister made some salads , Noa's salty pie (here with the cheese rounds on..) was wonderful ! Please let me know if you need any recipe .
Israeli food formus are less active these days, but you can find some interasting things if you want.. 'Hummoson' from Ynet-food forum (that guy who realy knows how to cook)make eveytime very tasty meals for his family [Hebrew potato recipe is Here] ,He's a kind person and I like the way he writes and he's photos too.. !
'Laleniya' (from Tapuz) brings a short allegory (Hebrew)- how you can more easly deal with the new 'situation'.. here in Israel, thanks, I know you think in a positive way and that you're a sensitive person too.

Preheat the oven to 350F (180C)
Mix:3 1/2 cups oats (for cooking),1/2 cup whole wheat flour,1 cup brown sugar,10 gr baking powder,20 gr vanilla sugar,2 eggs,1/4 cup water, 100 gr butter,1/2 cup oil, 1/2 cup coconut,1/2 cup sesame seeds,1/2 cup walnuts chopped),1/2 cup almonds (Chopped)
Make small balls (with wet hands..) .Flatten Them and bake for 15-20 minutes.

The Calzone is hot..
taken from King Arthur flour Recipes site,please write there : Calzone(the old link dosn't wort any more קלצונה
2 cups lukewarm (110°F) water
1 tablespoon sugar
1 tablespoon or packet active dry yeast
6 cups King Arthur Unbleached All-Purpose Flour
1 tablespoon salt
Dissolve yeast and sugar in lukewarm water in a large bowl. Let proof for 5 minutes or so; mixture should begin to bubble. Stir 1 cup flour into yeast mixture. Add salt, then stir in an additional 4 1/2 cups flour. When dough begins to hold together and pull away from the sides of the bowl, it's ready to knead. Knead dough, using remaining 1/2 cup flour for work surface. Knead for 3 to 4 minutes, then let dough rest while you clean and grease your bowl. Knead an additional 3 to 4 minutes. Dough should be smooth, elastic and no longer sticky. Form dough into a ball and place in greased bowl, turning to coat all sides. Cover bowl with a damp towel or piece of plastic wrap, and set it aside to rise until doubled in bulk, about 1 to 2 hours depending on where you set the bowl (as well as the humidity level in your kitchen.)
Punch dough down, and turn out onto a lightly floured surface (alternatively, you can leave dough in bowl and let it rise again, for about half the time of the initial rising; this will produce a finer-grained product). Shape dough and bake as you'd like.

Gateau Di Patate - Neapolitan potato cake + Lemon Squares **


As we love potatoes and Italian food too,you can always find lot of potatoes here, and a nice collection of Italian cookbooks as well ..Italian Food is very popular here, in Israel. when you bake this 'cake' like dish , add salad and any cold drink..and you have a nice meal for 6 or more.. This recipe is from one of my favorites Cookbook:The Classic Italian Cookbook by Julia Della Croce [RD press 1996].+ [we love this Focaccia from the same cookbook] -"This Neapolitan treatment of potatoes produces a layer "cake" of sorts.
Gateau Di Patate
1.5 kg (=3lb)potatoes,scrubbed but unpeeled
125 gr butter(I use 100gr)
1 cup (=250ml) warm milk
2 eggs ,lightly beaten
3 TB grated parmesan (or pecorino)
5 TB bread crumbs,lightly toasted
250 g(=8oz) mozzarela, diced (I use 200 gr)
125 gr (=4oz) Italian salami, finely diced (or prosciutto)

H O W
1. Preheat the oven to 180C (350F)
2. Boil the potatoes until tender, drain.when they have cooled slightly, peel and mush them.Mix in the butter, milk, eggs and 1TB of grated cheese.
3. Butter a baking dish (I use 9X13 in dish) ,spinkle in half of the bread crumbs.
4. Spoon half of the potato mixture into the dish,spreading it evently. Top with the mozzarella, 1TB of grated cheese, and the salami, then cover with the rest of the potato.
5. Sprinkle the top with the leftover bread crumbs, the final TB of grated cheese, and a little paprika. Bake for 30 minutes.If the top isn't golden brown bake for 10 minutes more (or place the dish under the broiler for few minutes.Let rest for 10 minutes, then serve.













This cake was a very good surprise tonight :soft ,lemony with nuts..I'm sure I'll bake this one again !






















Lemon Squares מרובעיות לימון/ K.D.S (with a change)
Preheat oven to 400F (200C)
sift together:
1 1/2 cups AP flour
1/2 ts salt
1/4 ts baking powder

Beat 3 egg whites until sost mounds form.
add 1 cup sugar a little at a time and beat untill stiff.
Cream together:
1/4 lb (=120 gr) soft butter
2/3 cup sugar

H O W
Add 3 egg yolks one at a time.
add dry ingredients alternately with 1/3 cup lemon juice and blend well.
stir in 2 ts lemon rind and 1/2 cup chopped nuts.
Fold in beaten egg whites.
pour into 9X13 in. tin.
Bake in 400F oven for 25 minutes.
cool slightly and cut into squares.(you can ice with thin lemon icing) .

Gateau Di Patate-מאפה ת"פ נפוליטני
החומרים
קילו וחצי ק"ג תפוחי אדמה,מנוקים, בלתי קלופים
מאה עשרים וחמש גרם חמאה לא מלוחה
מאתיים וחמישים מ"ל חלב חם =1 כוס
שתי ביצים טרופות קל
שלוש כפות גבינת פרמזן או פיקורינו מגוררת
חמש כפות פירורי לחם 'מוצנמים' toasted
מאתיים וחמישים גרם מוצרלה בקוביות
מאה עשרים וחמש גרם סלמי איטלקי או prosciutto בקוביות
פפריקה מתוקה


ההכנה
לחמם תנור ל 180
לבשל את ת"פ עד שרכים, לסנן. כשהצטננו מעט, לקלף ולמעוך למחית חלקה
להוסיף למחית, חמאה, חלב, ביצים ו-1 כף גבינה מגוררת פרמזן
לשמן תבנית בחמאה. לפזר לתוכה מחצית מפרורי הלחם
לצקת מחצית מכמות תערובת הת"פ לתבנית וליישר
לכסות במוצרלה ,1 כף פרמזן והנקניק
לכסות במחצית שנייה של ת"פ
לפזר למעלה את יתרת הפרורים, יתרת הגבינה המגוררת, ומעט פפריקה
לאפות כ- 30 דקות
אם המאפה לא זהוב מספיק, ניתן לשים בגריל למספר דקות
להניח את המאפה ל  10 דקות לפני ההגשה
