Molasses-Spice Crackles

I've made these cookies smaller, SO I gut more cookies..(more then 50) they are spiced with cinnamon, ginger and cloves ,brown and very good , don't forget: you have to Chill the dough for 2 hours before shaping the balls..
Molasses-Spice Crackles / Cooking Light 
1 1/3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon

1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup firmly packed brown sugar

1/4 cup stick margarine, softened
2 tablespoons molasses
1 large egg white
1/4 cup granulated sugar
Combine first 6 ingredients in a bowl, and stir well. Set aside. Place brown sugar, margarine, molasses, and egg white in a food processor, and process until blended. Add dry ingredients to food processor, and process until blended, scraping sides of processor bowl once. Gently press mixture into a ball; wrap in plastic wrap. Chill 2 hours.
Preheat oven to 375°.

It's raining here in Israel for 3 days,water here and there..take a look outside the window.. few minutes before the next rain is coming .. when we wake up in the morning I can see my small garden full with water... I think the winter comes too soon this year .. (It's not cold yet !)
Tehina - is a healthy dip ,If you have pure tahini (sesame paste) -It's very easy to mix it..don't forget to add garlic, more is better.. ! ;-) Adding Turmeric to your soup will add a rich and yellow color - more than it was before..


And yes ... I love funny bowls - In this one I eat my soup :-)

---------- French Bread Rolls
Recipe is in this wonderful PDF file. Let the dough rise for 2 hours, and after shaping , for 45-60 minutes more. Bake at 450F (230c) for 22-25 minutes and then for 5 minutes more at 400F (200c).I've gut 13 Rolls, crispy outside and soft inside , go and bake them, this is a great recipe !

These Bagels are softer and smaller than the other sesame rings I've baked today [Here are my fresh Koulouria + the recipe] .For the 'potato water' I've cooked 1 small potato and use the water.. ; I added honey not malt syrup ;The dough was fine and it was funny to cook the Bagels for 1 minute on each side.. .This recipe is from the wonderful site I love :- Tastingmenu .

Bagels - 10 בייגלה
Ingredients :
1 cup lukewarm potato water (This is essentially the water left over from boiling potatoes. Covered, this will refrigerate for up to 3 days or frozen for up to 4 months. You can also dissolve 1½ tablespoons of potato flour in 1 cup of lukewarm water, but I haven’t tried this.)
1 envelope of yeast
1 tablespoon beaten egg
3 tablespoons canola oil
1 tablespoon malt syrup
~3 cups all-purpose flour
2 tbsp granulated sugar
1½ teaspoon Kosher salt
Poaching Liquid
16 cups water
1/3 cup honey
Glaze
1 egg yolk
1 tablespoon water
poppy or sesame seeds
In a large bowl, dissolve 1 tablespoon of granulated sugar into the lukewarm potato water.
Sprinkle the yeast on top and let it stand for 10 minutes or until it gets frothy.
Stir the tablespoon of beaten egg, canola oil and malt syrup into the yeast/water mixture.

Eating - S p a g h e t t i - S q u a s h - for the first time... דלעת הספגטי-טעימה ראשונה
"spaghetti squash = calabash = vegetable spaghetti Notes: After it's cooked, you can dig a fork into the flesh of a spaghetti squash and pull out long yellow strands that resemble spaghetti. Though they taste like squash, the "noodles" can serve as a low-calorie substitute for pasta. "

Seasoned with salt, Herbes de Provence (from paris..) and olive oil.
How to Bake: (each half was wrapped with Aluminum Foil) and baked at 400F (200C) for about 45 +- minutes or until soft ... and now.. play with your fork .. can you see the spaghetti ? ..[Please click to enlarge the picture]

My Pita Bread...
The world is full of Breads which I didn't bake in my small kitchen.. there are so many.. so I didn't know which Bread I'll bake for the Bread day.I love to bake French-Style Country Bread or Swedish Dill Bread or Roemary Rolls from Tuscany or Moroccan Bread Farina (baked on Stones) or.. a Danish Bread or XL Bagels (arabic) or - Koulouria - sesame rings from Greece (bake them as soon as you can) or French Bread Rolls (to Die For).. or Eliotes.. those Olive Rolls from Cyprus or Za'atar Flatbread, yes as I said we love them all,the list is long.. and I bake those again and again. I was busy with reading cookbooks , looking for some new Bread recipe, something special , and you know what ?? I've found.. maybe 10 or 20 or more recipes which look SO good.But during my day outside today, I've decided to bake the most famous Israeli Bread (yes I know not in Isarel only), PITA BREAD .You can't find even 1 Israeli which has no Pita's in his freezer.. you can eat Pita Bread with salty or sweet food.. you can find Pita Bread everywhere, and It's very easy to bake them.Once I've tried Elie Nassar's (Foodman) Pita Bread recipe ,I think It's a great recipe (And all the other in his Introduction To Lebanese Cuisine should be wonderful too) .2 years ago , It was October 2004.. I've baked his Pita's and wrote about it in Ort Food forum, It was funny to get those Pita pockets.Somebody from that Forum wrote Elie in egullet Forum about me..baking his 5 Pita's with the pockets..It was a success, and today I've baked Pita's again. Here is the recipe, try them , and please let me know about the pockets..
Pita Bread (Khobz Arabi
Makes 5 6-inch Pita loaves
3 Cups Bread flour or All Purpose flour
• ½ tsp Instant yeast (or 1 tsp Active Dry yeast combined with a Tbsp sugar and ¼ cup warm water till foamy)
• ½ tsp salt
• 1 Cup warm water (reduce the water by ¼ Cup if using Active Dry yeast)
H O W
Mix the flour and salt in a bowl, then add the yeast (or yeast/water mixture) and add the water slowly while stirring with a plastic or wooden spoon until everything is combined into a ball.
You might need more or less water than the 1 cup. Once the dough comes together, transfer it to a floured surface and knead for a good ten minutes until it is soft and elastic. Roll the dough into a log and cut it into five equal parts (cut into fewer pieces if you want bigger loaves). Form each piece into a ball and put them all on a floured baking sheet.
Cover with a damp towel and let them rise in a warm place for about an hour or until almost double in size.Full step by step recipe is here

Banana Cranberry Loaf and more


Onion Buns/Soups and Breads-Family Circle step-by-step
7 gr dried yeast
1 ts sugar
1 TB olive oil
2 onions,fienely chopped
500 gr plain flour
2 ts salt
1 egg, beaten
1 TB sesame seed
1.Mix the yeast,sugar and 1/2 cup of warm water.cover and set aside for 10 minutes, or until frothy.Heat the oil in a frying pan and cook the onion until golden.
2.Sift the flour and salt into a bowl.stir in the onion and make a well in the center.pour in 1 cup of warm water and the yeast.mix to a soft dough and knead for 10 minutes.put in an oiled bowl,cover and leave for 1 hour, or untildoubled.grease 12 - 1/2 cup capacity muffin tins.
3. Pounch down the dough,turn out onto a floured surface and knead for 1 minute.divide the dough into 12 portions and shape each into a ball.place in the tin,cover,and set aside in a warm place for 30 minutes or until well risen.preheat the oven to 350F (180c). brush the buns with the egg and sprinkle with sesame seeds.bake for 30 minutes or until crusty.

----------------- This is a nice tea bread for everyday..

























Banana Cranberry Loaf
175 gr self raising flour
1/2 ts baking powder
150 gr soft brown sugar
2 bananas, mashed
50 gr chopped mixed peel
25 gr chopped nuts
50 gr dried canberries
5-6 TB orange juice
2 eggs, beaten
150 ml oil

1. Grease 900 gr loaf pan,line with baking parchment
2.Sieve the flour and baking powder, into a mixing bowl.stir in the sugar, bananas, mixed peel and cranberries .
3. Stir the orange juice+eggs+oil together. add the mixture to the dry ingredients and mix until well blended.pour the mixture into the prepared tin.
4. Bake in a preheated oven 350F (108C),for about 1 hour or until done.
