Tuna,Red Cabbage and Caper Salad- a full meal in your plate


Tuna,Red Cabbage and Caper Salad
/recipe based on '64 Delectable Dishes' Booklet-RD Guides
4 Serves

1 cup trimmed+ sliced green beans
4 cups chopped red cabbage (8 oz)
1/2 cup (about 1/2) chopped red onion
1/2 cup chopped parsley
1 can 6.5 oz tuna (I use 160gr RIO mara tuna can)  rinsed, drained and flaked with a fork
2 TB red wine vinegar
1-2 TB extra virgin olive oil
1-2 TB capers, rinsed
freshly ground black pepper
H O W :
Heat a small saucepan (I use a wok) half filled with water to boiling.
Add the beans and cook until crisp-tender, about 3 minutes. Drain and rinse with cold water.
Toss the beans in a large serving bowl with the cabbage,onions,parsley,tuna,vinegar,oil,caper and pepper.
